Ingredients (for 3 or 4 guests)

  • ¼ cup of fried onion (50 g)
  • ¼ glass of white wine (50 ml)
  • 5 fillets of pork loin (750 g)
  • ½ cup of heavy cream (125 ml)
  • 1 tablespoon of hot pepper (5 g)
  • Condiments: coarse salt, provincial herbs
  • Olive oil (the amount needed)

Preparation

  1. First, preheat the oven to 200°C.
  2. Next, clean the pork loin fillets and place them in a refractory container. Once there, bathe them in plenty of olive oil and coarse salt. Set aside for 10 to 15 minutes and after this time, grease with hot pepper.
  3. Afterwards, place the fillets in the oven for 20 minutes at a temperature of 220 ºC.
  4. After the first 15 minutes of cooking, open the oven and add the white wine over the fillets. Put them back in the oven.
  5. On the other hand, cut the blue cheese into more or less thin slices.
  6. On the other hand, put the cream in a saucepan over medium heat. Before it starts to boil, add the pieces of blue cheese. Stir constantly so that both ingredients progressively mix and start to form a cream.
  7. Once the cream has thickened enough, add the Provençal herbs and keep stirring over low heat for another 2 or 3 minutes. If it isn’t thick enough, you can add a little butter or sour cream.
  8. As soon as the pork loin fillets are ready, we turn off the oven, take out the container and bathe them in the blue cheese cream. When serving, it can be decorated with another pinch of Provençal herbs and a little fresh parsley.

The ideal garnishes for your pork loin should not compete in flavor with blue cheese, so it is recommended to opt for preparations that have a mild flavor and, preferably, no garlic (in the case of salty garnishes). With this in mind, we suggest two recipes.

Apple puree to accompany the pork loin

Ingredients (for 3-4 guests)

  • 1 branch of cinnamon
  • 8 red apples
  • 1 cup of water (250 ml)
  • ½ cup of sugar or honey (100 g)
  • Optional: the juice of 1 lemon

Preparation

  1. First, wash and peel the apples. Throw away the seeds and cut the rest into Julienne.
  2. Then in a pot, place the water and apples over high heat.
  3. Afterwards, when it starts to boil, reduce the heat by half and add the cinnamon branch, lemon juice and sugar. Stir everything constantly to mix the ingredients well.
  4. On the other hand, let everything cook for 40 to 45 minutes or so.
  5. Once that time has passed, turn off the heat, remove the cinnamon sprig from the pan and place it on a plate.
  6. Afterwards, mix everything with the help of a hand mixer. The idea is to homogenize all the ingredients in the pan and get a more or less thick jam.
  7. Finally, place the compote in a container and reintroduce the cinnamon sprig. Serve both hot and cold.
