This recipe mixes the interesting flavors of the three-milk dessert with the texture and creaminess of the meringue. To prepare a serving for 8 people, you will need the following ingredients:

for the cake

  • 3 eggs (180 g).
  • 2 cups of flour (280 g).
  • 3/4 liters of milk (750 ml).
  • 1 cup of powdered milk (140 g).
  • 2/3 cup of butter (100 g).
  • 1 and 1/4 cups of sugar (250 g).
  • 1 cup of condensed milk (250 ml).
  • 1/4 cup of heavy cream (125 ml).
  • 6 teaspoons of baking powder (30 g).
  • 1 teaspoon of vanilla essence (5 ml).

  • 6 eggs (360 g).
  • 1 lemon (100 g).
  • 3/4 cup of water (180 ml).
  • 1 and 1/2 cup sugar (300 g).
  • 1/4 spoon of cream of tartar (2.5 g).

  • To start making the cake, we put the butter together with the sugar in a bowl and  beat it with a wire whisk until a smooth cream textured dough is achieved. For this, it is recommended to remove the butter from the refrigerator half an hour before starting to cook.
  • On the other hand, preheat the oven to 250 ºC while doing the previous step. 
  • To proceed with the mixture, add the eggs one by one to the bowl with the sugar and butter mixture and keep stirring so that they blend well. Then add the flour and baking powder.
  • When all the above mixture is well mixed, add the milk and vanilla essence.
  • After that, stir a little more and pour everything into a baking dish. Place the mixture in the oven for half an hour, controlling the cooking point by sticking the cake with a toothpick to see if it comes out clean.
  • When the cake has grown and browned on top, remove it from the oven and skewer across the surface with a fork. By making these holes, we will be able to allow the cream that we are going to prepare next to penetrate well into the cake.

  • To prepare this cream, beat the condensed milk, the cream and the powdered milk until you get a homogeneous mixture.
  • Afterwards, without removing the cake from the mold, pour the cream over it, spread it well and let it rest. The cream must penetrate through the holes.

Preparation of meringue

Once the cake is ready and while it cools slightly and the cream penetrates the holes, prepare the meringue. To do this, follow the steps below:

  • First, start beating the egg whites until you reach the snow point. The most recommended way to achieve this is to use an electric mixer with a head of wires, rather than hitting them by hand.
  • When it’s almost done, add the cream of tartar. This substance will allow the meringue to increase in volume and acquire a more spongy texture. If you don’t have this ingredient, you can replace it with a bag of baking soda.
  • Then, set the mixture aside and put it to heat in a pan over a low heat with the water and sugar. Stir this mixture so that the sugar is completely dissolved and add some lemon zest.
  • Keep stirring so that the sugar turns into caramel. We will achieve this when, when lifting the spoon, the drops slowly fall.
  • Once the caramel is ready, pour it into the bowl with the egg whites and beat vigorously for about 6 minutes. With that, we will get a good consistency and the meringue will be ready.
  • Finally, just pour the meringue on the cake that has already been prepared and spread it evenly  over its entire surface, with the help of a knife or spatula.
