  • When the onion has acquired a certain transparent hue, remove the pan from the heat. Remove the tomatoes and drain, leaving a little water in the pan.
  • When the cooking time for the meat has passed, drain to remove the liquid it has released, reserving it, and passing the meat to a pan with a little hot oil.
  • Fry the pieces of meat,  sealing them quickly so that the water does not evaporate and avoiding making the meat too dry.

  1. In a saucepan, add the onion, garlic and tomato mixture. Stir, season and cook for 5 minutes.
  2. At this point, add a cup of the meat broth that was previously reserved and let it reduce a little on the fire so that it acquires the consistency of a sauce.
  3. Finally add the chipotle pepper and another pinch of salt. Let the whole mixture cook for about 8 minutes, so that the meat reaches the point inside and the flavors are integrated correctly.
