4 Delicious Recipes With Carrots
Carrots offer us a lot of vitamins, are ideal for the skin and eyesight, but we don’t always know how to prepare them, just using that traditional salad. So do n’t miss these 4 delicious carrot recipes!
Carrot pie
This is a delicious recipe that you will certainly enjoy. To prepare it will be necessary:
PASTA
- 120 g of very fine wholemeal flour
- 50 ml of water
- 1 egg
- 1 tablespoon of extra virgin olive oil
- Sea salt
FILLING
- 1 onion
- 1 leek
- 4 carrots
- 200 g of pumpkin
- 3 tablespoons of olive oil
- Sea salt
- Aubergine
- 3 tablespoons of ricotta or curd
- 2 tablespoons of grated parmesan cheese
- Parsley
- Whole ground cracker
- sesame seeds
METHOD OF PREPARATION
Mix all the ingredients indicated to prepare the dough.
Work them with your hands until you get a smooth and elastic dough, then wrap it and let it rest in the fridge for approximately 30 minutes.
While the dough rests, peel the onion and cut it very thin. Repeat the process with the eggplant, carrots and pumpkin.
Finally put everything in a skillet with oil and sea salt.
When the vegetables are well cooked, remove them. Once cool, mix them with the cheeses.
Preheat the oven to 180 ÂșC, but first line it with aluminum foil. Roll out the dough very thin on the floured surface.
Spread the crushed cookies into the dough. Roll out the filling, but make sure it is well distributed over the dough.
Roll the dough carefully so as not to open. Finally, sprinkle the sesame seeds on top and bake.
Cream of carrots and pumpkin
This is a recipe of Spanish origin that you will surely love.
INGREDIENTS
- 500 g of pumpkin,
- Parmesan cheese,
- 4 carrots.
METHOD OF PREPARATION
First, peel the carrots and cut the pumpkin, then cook both in a pan with water and salt.
Once they are cooked, remove them from the water and put them in a food processor. Finally, put Parmesan cheese on top and you’re done!
To season, opt for parsley.
Mashed carrots and chickpeas
This is an oriental recipe, but very simple to prepare. Write down:
- 400 g of chickpeas
- 600 g of carrots
- 1 tomato
- 1 clove of garlic
- 1 onion
- 1 teaspoon of curry
- 1 vegetable broth
- 1 teaspoon of olive oil
- fresh coriander
- 20 g of raisins
METHOD OF PREPARATION
- Peel the vegetables and cut them into large pieces.
- Rinse the chickpeas.
- Saute the vegetables in a pan with oil, add the chickpeas, the vegetable stock, the curry and 1 liter of water.
- Let it cook for 45 minutes. Once removed from the heat, beat the ingredients and serve as a puree.
- As an option, place the raisins and chopped cilantro on top.
carrot cake
Write down the ingredients:
- 400 g of Maria-type biscuit
- 1 box of condensed milk
- 1 glass of milk
- 2 grated carrots
- (Optional) raisins and almonds
METHOD OF PREPARATION
The preparation is very simple, and children will certainly love it.
First break up the biscuits, then add the glass of milk and the condensed milk.
Beat everything until it forms a paste, then add the carrots and put the mixture into a mold. Then bake.
It can be served cold as well as hot.
